1 Large ripe mango

300ml (0.5 pint) freshly squeezed orange juice

Mint leaves to decorate (optional)

Cut the mango into half and scoop out flesh and juice into a blender or food processor. Add the orange juice and blend for around 1 minute.

Pour into a glass. Add a few mint leaves to decorate and serve with a straw.

  • 2 medium large eggs

Warm the milk in a saucepan. Beat the eggs with the honey and vanilla extract in a bowl. Pour in the milk, whisking well. Strain into an oven proof dish or 3-4 individual ramekins

Place in a roasting tin containing 1 cm of cold water and bake in a preheated oven at 160° C (325° F), gas mark 3, for about 20 minutes, until it sets

Serve cold, warm or hot with the stewed fruit on the side
